1 cup miniature marshmallows
1/3 cup firmly packed brown sugar

Sweet Mashed Potatoes: potato washing&peeling—-boil the peeled potatoes—-then mash the boiled potatoes into pasty.
Minced Fresh Ginger: ginger washing&peeling—ginger slicing—sliced ginger grinding


1. Heat oven to 350°F. Spray 2-quart casserole dish with nonstick cooking spray*. In a medium bowl combine all ingredients; stir to mix well.
2. Bake, uncovered, 20 minutes. Stir; continue baking 5 to 10 minutes or until marshmallows are melted and potatoes are heated through.
